Quinoa and Ground Almond Crumble: RECIPE.

If you’re anything like me, finding a healthier alternative to an old time favourite is one of the best things a self-confessed health food junkie can do. Growing up, my Nan used to make the best apple crumble, topped with yoghurt or ice cream for that delectable hot-cold combo that never failed to cheer me up, whatever the occasion.

So, when my boyfriend and I stumbled across this recipe in Gwyneth Paltrow’s It’s All Good recipe book (a go-to for most of our cooking/baking ventures!) we couldn’t resist trying it out on our lazy day off on Easter Monday. We took a quick trip to Sainsbury’s to pick up a few missing ingredients, and got started with these super easy steps.

For the base, you will need:
Mixed fruit of any kind (we went for frozen berries, plus a sliced/stewed pear for added sweetness)
2 tablespoons maple syrup.

For the topping, you will need:
½ cup quinoa.
½ cup ground almonds.
2 tablespoons maple syrup.
2 tablespoons olive oil.

Simply mix the fruit and maple syrup in a shallow dish, combine the crumble ingredients in a separate dish and top the fruit and place in the oven (200 degrees) for 20-25 minutes.

Add ice cream or yogurt if desired, and enjoy!
